Huevos Rancheros Sunday BrunchPosted: September 4, 2011
A woman I follow on Twitter, @kristy, tweeted out this week, “Anybody have any good breakfast recipes for camping this weekend?” I instantly thought of Huevos Rancheros, which I discovered on the West Coast. When I lived in San Diego, I’d have it for Sunday brunch at Hernandez’ Hideaway near Lake Hodges. It’s a very hearty breakfast, so really works well for brunch (combined breakfast & lunch for caloric purposes:). It’s also good if you, um, may have had a bit too much to drink the night before:) Ever since her tweet, I’ve wanted it, so I made it for brunch today! Here’s my simple and quick recipe:
1 tortilla per serving
1 can Spicy chili beans; can also used homemade chili
Shredded Mexican or Taco cheese
2 eggs per serving
While heating up fry pan for eggs, microwave tortillas for 30 seconds. Microwave can of spicy chili beans or chili until hot; about 2 mins. Fry eggs over easy (or over medium, but not dead). While eggs are cooking, spoon warm beans on top of tortillas and sprinkle with shredded cheese; microwave another minute or until cheese melts. Put eggs on top of warm tortilla, beans, melted cheese. Microwave salsa 30 seconds so it’s warm. Spoon salsa on top. Spoon dollops of sour cream on top and garnish with jalapenos to taste. I love this breakfast, but rarely make it. With fall approaching along with football Sundays, it may become a regular Sunday brunch!
While it’s a bit ambitious for a camping meal, it can be done: With double burner Coleman stove, have one fry pan for eggs and another fry pan for beans. In one, warm up tortillas and then put on plate and cover w/ foil. Warm up chili beans and once hot enough, put shredded cheese on top of beans right in fry pan; cover w/ foil on low heat. In other fry pan, cook eggs. Assemble as above; only in this case, the salsa, sour cream and jalapenos will be chilled from the cooler.
Can be served with coffee, or if you’re in the mood, OJ and tequila or Sangria:) Nice brunch to share with friends! Hearty breakfast before the tailgating begins. Enjoy!
